Setting Up Default Due Dates for Task Being Linked to a Specific Question in a Questionnaire

There are two ways to proceed: either set this value on each individual question as follows.

1) Open the settings of a question:

2) Scroll down to the Task Management section and expand it

3) Change the individual question value here:

And eventually save these changes.

... or use a more global approach by looking at the questionnaire settings:

and scroll to the tasks section:

If you put something on an individual question, it overrides whatever the standard for that severity level is.
